She aspired to illuminate her lands through the creation of great Champagne. Blend: 50% Pinot Noir, 40% Chardonnay, 10% Pinot Meunier. Henriot Brut Souverain offers a rich and diversified aromatic range that gives it a beautiful complexity. Each cru expresses itself in a unique and dynamic manner, not overshadowing the others in the expression. Therefore, it is a perfectly organized “ballet of aromas”, generous and salivating notes of cake with fresh citrus fruits, the exuberance of smoke evolving into pure chalk, not forgetting to mention the basket of stone fruits and red fruits. On the palate, it is ample, straightforward, round with a long, persistent freshness.” Alice Tétienne, Cellar Master of Maison Henriot.

Some bitter chocolate at the end.”

Arrowood 2021 Knights Valley Cabernet Sauvignon – 93 Points James Suckling. Knights Valley is one of the most remote AVAs in Sonoma County, bordering Napa Valley to the east and Alexander Valley to the northwest. Protected by ocean influences, this region experiences a moderated climate, offering a longer and later growing season that develops more dark fruit aromatics. Very fine textured soils allow for great drainage, producing small berries that deliver powerful tannins and densely structured wines. 2021 is a vintage that is true to site. In the southernmost part of Paso Robles, vineyards thrive thanks to the marine influence of the Pacific Ocean. Coastal fog protects the grapes during warmer months and a diverse set of soil types creates wine with structure and intensity. Cabernet Sauvignon bunches are destemmed, crushed, and fermented under controlled conditions, allowing for maximum extraction of color and flavor while maintaining a silkiness of texture. A long growing season produces a scrumptious Cabernet Sauvignon with fully pronounced flavors and an elegant structure. Coated with its luxuriously velvety tannins, this wine delivers a punch of fleshy red plums, blackberries and blueberries on the front palate, backed by hints of cedar and violets. This wine pairs perfectly with bold, savory dishes like pulled pork, shepherd’s pie and mushrooms.

As a contrast to the winemaking practices of the flagship Western Cape Chardonnay – which is a blend of several distinct sites from across the Western Cape – winemaker Graham Weerts focuses on the unique terroir of Stellenbosch for Silene. A blend of our estate Fijnbosch vineyard and neighboring mountain vineyards, the 2021 Silene offers alluring notes of lemon-lime, peach, and citrus blossom, carried by a bright salinity and richly textured, mineral finish.
